A literary work that is missing a certain letter from the entire text is called a lipogram. The letter chosen most often is 'e', no doubt because of the extra challenge it imposes on the writer. George Perec's La Disparition is a commonly-cited example.

Interesting article by Dave Winer on the fourth anniversary of XML-RPC. Someday I'll get around to playing with it - I find the simplicity and tight constraints it imposes on the usage of types appealing.
It is a truism of sorts that, the more limited the design, the more tightly constrained the features of the tool, the more creativity the developer is forced to use in search of a solution. This is the reason I think Java is a decent language - it has remained a relatively small language that is focused on object-oriented programming. When you work with it, you're forced to work, to think, within these constraints. C++ is a sprawling mish-mash by comparison (this is not to say C++ doesn't have its place - the BeOS API, for instance, made wonderful use of C++).
