January 3, 2001 312pm CST I don't like it when food has been overseasoned. I like spicy foods as much as anyone, but it seems like a lot of people try to make food so hot that the flavor cannot be enjoyed. Sweet flavors can also overpower food. Ketchup and barbecue sauce are terrible offenders. Though I really enjoy these sauces on meat and potatoes, too much of them can completely cover up the dish I am trying to eat. Even hamburgers benefit when one lays off of the condiments. I enjoy burgers most with a just a little bit of ketchup or a sauce made from mushrooms, onions, the drippings from the pan in which the burgers are cooked, and a little shiraz. The onions provide a little bit of sugar, and there is just a hint of sweetness in the wine, but the sauce itself is more savory. One can really taste the flavor of the beef with a sauce such as this.
