Largo Canyon -- They said they would post to the blog.... but now everyone is humming and hawing about what to write about. Well.... for one thing, I think John's Carne Adovada should be written about. It is really quite exquisite. He takes a pork roast and simmers it overnight in red New Mexican chile, with lots of garlic and cumin in the sauce. Then he cooks it all day and serves it on a bed of rice with a garnish of cilantro leaves. Yummy!

We had that tonight instead of on Cinco de Mayo. John followed it up with a dessert of chewy brownies and ice cream. No one complains about the food at the Largo Canyon School.

Tomorrow is our day off. Audie and Mike are heading over to Gobernador to see if they want to build a house there. We have plans to build them a solar strawbale house with a tiny garden behind an adobe wall. First they have to decide if they could stand living that far off the beaten path. Hmmm.....
