Dave Seidel pointed me at David Brown's MailEdit tool, which extends Radio's Mail-to-Weblog tool to implement pretty much everything I've wanted: a way to specify a title, categories, and to upload attachments to my Radio site. In fact, I'm posting this via email just to prove that it works.
