As one old cowboy once said, "You could tie 'em to a tree and wave the proof in their faces and they still wouldn't believe!"
Here we have yet more proof, coming from one of the most revered long-term studies, of the benefits of the low-carb diet. And yet despite statistical and empirical evidence the nay-sayers are as hard at work as ever trying to wriggle away from the proof that is being waved in their faces. Perhaps it is the ghost of Dr. Atkins coming back to haunt them that upsets them so much, or maybe it is the fact that a low-carb diet often includes a substantial intake of animal-derived protein and fat - something which is an anathema to many of these avowed vegetarians and vegans.
Never-the-less, despite findings like “The study of thousands of women over two decades found that those who got lots of their carbohydrates from refined sugars and highly processed foods nearly doubled their risk of heart disease.” we find supposedly learned and reputable “experts” like Dr. Robert Eckel, immediate past president of the American Heart Association, who said the study was well done, but noted that the nurses' recall of what they ate likely isn't perfect. C’mon doc, you can do better than that! Why not just say that they were all liars, and were really gorging on blueberry bran muffins and granola for all those years, and that’s what kept ‘em healthy? He goes on to say that other studies have shown heart disease risk is cut by eating less fat and more whole grains, fresh fruit and vegetables - the approach of the government's food pyramid - and further claims that medical guidelines won't be changed by the new study, although it “raises questions” about the role of refined sugar.
So there you have it a major, highly respected study shows that health can be improved by eating a low-carb, high protein, high fat diet, and the “experts” are going to do everything they can to refuse to see the proof before their eyes. Perhaps that is where the old cowboy’s expression "bound and determined" came from: these people are "bound" to that tree and "determined" that the proof being waved in their faces is just not so, and if they deny it hard enough it’ll just go away and stop tormenting them.
