Favorite Recipes, Little Known Food Facts, New Food Observations, The Latest Health News!

Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

Cold Spaghetti Salad
for the salad...
4 medium tomatoes, peeled, chopped
1 medium cucumber, chopped
1 small green pepper, seeded, chopped
1 small onion, chopped
1 cup black olives, chopped
1/4 cup fresh parsley (or 1 1/2 tbsp dried)
8 oz. spaghetti or fettuccine, cooked, drained
1 cup crumbled feta cheese (4 oz.)
1 small zucchini, chopped


for the dressing...
1/2 cup extra virgin olive oil
1 tbsp. sugar
3 tbsp. white wine
2 tbsp. lemon juice
1 tbsp. fresh basil (or 1 tsp. dried)
1/4 tsp. pepper
Dash Tobasco sauce
Combine all salad ingredients in a large bowl. Mix the dressing, drizzle over salad, and toss. Chill for an hour. Serves about six.

Saw a young hammerhead shark swimming past my front door yesterday - where else could this happen!!?? We never want to take for granted where we are now and the agony we had to go thru to get here, i.e., should we or shouldn't we? Do we sell the Colorado house or not? What about leaving the family in Colorado? All these things were hard decisions - but seeing a shark swimming just outside my door makes it all worthwhile!

I haven't been doing much cooking the last several days - just the barest minimum to keep the hubby from finding his "food" elsewhere! I have a new interested that may or may not become a new business. I am looking into making candles and handmade body lotions and potpourri. I'll provide a recipe from my stash just to live up to the name of this blog!
