Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

I like to buy green peppers when they are on sale so I can make one of our favorite dishes, Stuffed Peppers. It's not an exact recipe, as you'll see! You start with about 3 good size green peppers (or red or orange). Cut them in half and remove all the seeds and thick whitish parts. This will give you six halves.

The filling can be either ground turkey or a good lean hamburger, one pound of either one. We've begun to enjoy the flavor and texture of ground turkey instead of hamburger. Break up the meat in a large bowl. Add about 1/2 cup chopped onions, 1/2 cup Minute Rice (uncooked), 1 large egg, slightly beaten, about 1/2 cup ketchup, some salt and pepper and a sprinkle of oregano or your favorite spice. Mix everything up really good and stuff the pepper halves.

Put the stuffed peppers in a casserole that will allow them to be in one layer, close together. Pour a can of tomato soup OR a can of chopped tomatoes over all the peppers. Cover the pan tightly and bake for about 1 hour at 350 degrees. They are done when the pepper is fork tender. They are yummy  and pretty easy!
