ORIENTAL CHICKEN STEW -- Serves 4 to 6
4 medium carrots, cut into pieces 1 pound boneless, skinless chicken breasts, cut into pieces 1/2 cup fat free chicken broth 1 tspn ground ginger 1 tbspn brown sugar 2 tbspns teriyaki sauce 1/2 tspn ground allspice 1/2 tspn hot pepper sauce 1 tbspn cornstarch 1 (8 oz.) can pineapple chunks, packed in juice, drained and juice reserved 1 medium green bell pepper, cut into pieces 1 medium red bell pepper, cut into pieces 1 cup broccoli flowerets
Mix all ingredients except pineapple and cornstarch and put in crockpot; Cover and cook on low heat setting for 8 hours (high setting for 4 hours) until vegetables are tender and chicken is no longer pink.
Mix reserved pineapple juice and cornstarch until smooth; gradually stir into chicken mixture. Stir in pineapple. Cover and cook on high heat setting for 15 minutes or until slightly thickened. Total Calories per serving -- 210 Total Fat -- 4 grams Saturated Fat -- 1 gram
