Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

Wisconsin Style Chili

I made a really good pot of chili last night - not the kind of chili you probably think of when you think of chili, but good old Wisconsin style chili!

You start by browning the meat - I have always used hamburger but I'm now using ground turkey since it tastes so much better. I use a pound of meat. Brown it lightly in a dutch oven with some chopped onion, about half of a medium onion. Then add a can of tomato paste and a can of diced tomatoes. Also add about a tablespoon of chili powder or chili con carne spice and some salt and pepper. I sometimes add some chopped celery and chopped bell pepper and saute that with the meat and onions before adding the tomato stuff. I also added about 1/2 teaspoon allspice last night and that was a very good thing! You will probably have to add more water to this also, especially as the macaroni cooks.

Let this simmer , covered, for an hour on very low heat. About 45 minutes before you want to eat, add about  3/4  cup elbow macaroni and stir it periodically, continuing the slow simmer. Don't worry about the macaroni getting too soft, it's supposed to! Keep tasting it to make sure the spices are okay and the salt is okay, adding spices as necessary for your taste. This is NOT a spicy chili nor is it an exact recipe!

Serve with oyster crackers and enjoy!
