Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

This is from the Palm Beach Post By Scott Eyman. It looks yummy - I'm gonna give it a try!

Dorothy DeDreux Nank's egg salad

               8 large eggs, hard-boiled and chopped

               7 queen-size Spanish green olives with pimiento, finely chopped

               4 1/2 heaping tablespoons mayonnaise

               Salt and pepper to taste

               8 slices rye bread

To chopped eggs, add mayonnaise and mix well, then add olives and mix well again.
Add salt and pepper to taste. Spread on rye bread and serve at room temperature.
Makes enough for four large sandwiches.

This results in a moist egg salad. You can use light mayonnaise to cut down on fat and calories.

I'm not surprised at this review of Healthy Choice - I never buy them and instead much prefer Lean Cuisine or Amy's entrees.

Mixed Grills a lousy Choice

Healthy Choice Mixed Grills Frozen Dinners With Dipping Sauce. Chicken With Roasted Garlic Tomato Sauce, Chicken With Roasted Red Pepper Sauce, Chicken With Ginger Sauce, Chicken With Barbecue Sauce, Steak With Zesty Steak Sauce, and Steak With Teriyaki Sauce. $3.50 per 13- to 14-ounce box.

Bonnie: The folks at Healthy Choice tout these new Mixed Grills as the first "healthy" frozen meals to satisfy men's appetites. The hungry few trying these for me considered them more of a snack than a satisfying meal. Their description of these as supersize airplane meals is apt, especially as regards taste, and should ring a bell with anyone who remembers when airlines served meals.

At 350 to 450 calories apiece, these are still much more satisfying than the many Lean Cuisine, Smart Ones or Healthy Choice entrees that contain fewer calories than a plain bagel.

Carolyn: I've long railed on Healthy Choice dinners for their lack of flavor. It's a complaint that was mitigated somewhat by the Healthy Choice Bowl offerings, with their interesting sauces that you heat separately. But these new Mixed Grills find Healthy Choice back to its old boring tricks.

These are Hungry Man-size portions of starch, vegetables and meat along with a dipping sauce in its own container. The problem is that most of these sauces are commonly available in the pasta-sauce, condiment or Asian-food aisles of the supermarket.

And who can't make some rice or pasta and then throw a piece of meat or chicken and some cut-up vegetables on a grill and serve it alongside a jarred sauce?

A Burrito Discovery

I made a very interesting discovery last nite! I made burritos with ground turkey instead of ground beef and they were so much better tasting that it was hard to believe! The meat was more tender and flavorful and didn't even taste like turkey, per se. Not that we don't like the taste of turkey, but you want a burrito to taste like a burrito!

I started by browning the turkey with some chopped onion in a little butter. Not too brown, but just enough to make sure the turkey was fully cooked with just a touch of brown here and there. Then I added a packet of burrito seasoning (I think it was Lawry's - their seasonings are always the best tasting) and simmered it, following the package directions. I turned it off after about 5 minutes of simmering because we weren't ready to eat yet. When we wanted to eat, I turned it back on for another 5 minutes or so.

I served it with store bought tortilla shells, grated cheddar cheese, low fat sour cream, chopped tomato and some taco sauce. I am very impressed with how delicious they turned out and I think that I probably won't use ground beef at all anymore except for regular hamburgers! You really must try this!
