ADF UIX is one of those technologies that I wish I had more time to play with. What I've seen of it blows me away. Its declarative approach to building web applications is a really nice idea, and it should be interesting to see what the future holds in terms of Java ServerFaces. My favourite UIX demo of all time is the internal site we have for collateral and other information about JDeveloper - it has a theme drop down that lets you cycle the web site through various different look and feels:

Pretty nice :) Anyway, Jonas Jacobi, a product manager for ADF UIX, recently started a blog. Bookmarked!
