I downloaded Popfile last night for our home computer after reading about it in Linux Magazine. What a wonderful program. It is free, open source, cross platform and very powerful. It has a great ease of installation onto windows thanks largely to Nullsoft's NSIS installation framework and an easy setup thanks to the excellent documentation that exists.
What does Popfile do? it works as a wrapper around an email client such as Outlook Express and you train it to recognize spam. It uses Bayesian filtering to analyze counts of certain words (and phrases?) of the incomming mail and sorts it into spam vs not spam, or if you want to have more categories, it can learn to recognize those, too. It also is smart enough to sort incomming messages by size and download the smallest first so you can read those while the big ones are downloading.
