"Which one do I choose to do this XHTML 1.0 thing right? Where's the place to learn more about what all of this terminology means?" W3C.org is a good place to go. Zvon.org is another excellent resource. I also suggest learning as much as you can about the basics of HTML before taking on XHTML. Just my opinion...
