I'm heading off to my friend's Día de los muertos / Lunar eclipse party this evening and bringing appetizer-sized Bean & Veggie Burritos. I've used this recipe for over 10 years, adapting it as needed. They're sorta a pain in the butt to make, but they come out great and you can make them ahead and refrigerate or freeze them until you need them. Recipe posted here. Have fun tonight, everyone!
