Yesterday was just a perfect day - good food, good family, and totally cozy on a very cold day.
I spent most of the day cooking - but fortunately, just about everything had been prepared and staged the night before. So, it was more like assemblage than actual cooking. But as all veteran Thanksgiving chefs know, assemblage is a huge part of the day.
Peter's cooking contributions were three fabulous loaves of Challah - which he made Wednesday night. Peter really has a way with bread and his Challah is killer good. However, we did have a bit of a close call on the Challah front. Peter took the bread out of the oven at 10:00 PM and then came upstairs to give me a piece. Yum. It was so good! But, while we were reveling in the Challah goodness, Tyge disappeared. He had snuck off downstairs, removed the towel from the top of the bread and was just getting ready to retrieve a loaf or three when Peter caught him. Whew! Catastrophe averted
The brined turkey turned out marvelously well - incredibly moist with great flavor. The stuffing was an apple, parsnip, sausage, and fresh sage melange and was also very yummy - although it was quite a bit of work. It took two hours of preparation and that was for a halved recipe. I think though that I would definitely make it again. Mom brought over our very favorite yams with cognac, nutmeg, and cream. Hard to go wrong on that one! My mouth is watering as I type. Everything was just so good.
After dinner and the dishes, Peter, Tyge, and I went for a long walk in the sub-zero cold. But we hit the jackpot on our outing, the Northern Lights were out in glorious full force.
A perfect end to a perfect day!

Finishing touches on the table. If you look very closely, you can see our linen turkey napkins, and our turkey bread plates. What you can't see are our nifty turkey dinner plates and turkey napkin rings. Peter spent two hours yesterday looking absolutely everywhere for the dinner plates and napkin rings - he could not find them. We figure they will resurface long about the Fourth of July.
