§ - Salt Away Eggplant Alkaloids - "Some bitterness comes from an alkaloid few people expect to find there—nicotine. In fact, next to tobacco, eggplant has more nicotine than any other plant." - Yikes! Not something I want to hear about one of my very favorite veggies! Not that I eat all that much of it since my favorite way to eat it—dipped in egg and flour then fried in bacon grease—is too labor intensive for this very lazy cook and not very healthy since the eggplant soaks up so much of the grease. Can't afford to go out very often to enjoy eggplant tempura, which is cooked too quickly for the grease to be absorbed, but again, not a cooking method I'm gonna bother with at home since temperature precision is essential to get it right. And I'm not overly excited about eggplant parmigiana since the tomatoes always seems to take over. (I want Italian, I eat lasagna.) Though now that I think about it, my college dorm cafeteria simply sliced eggplant, dipped it in cornmeal, and baked it. Wasn't nearly as good as fried in bacon grease, but right now even that sounds yummy enough—and would about match my willingness-to-cook level.
