The Perkins-Observatory has some nice science education resources that seem suitable for grade and middle school kids as well as people who might enjoy assembling paper models of spacecraft.

More serious is this nifty little radio telescope from a NASA education project. It would be an easy matter to make it work with a Mac or Linux (they have Windows software) and the difficulty level isn't too high. Very cool
