We had a surprise Spring snowstorm yesterday, so it only seems reasonable to think about warmer weather and - ice cream.
Looking through my old notes here are some attempts at reproducing Ben and Jerry's flavors. Note that fresh ingredients are a must and you need to use high grade chocolate (Lindt or Schaffenberg for example) and real vanilla (none of that awful extract found in supermarkets).
Cherry Garcia clone
1/2 c semisweet chocolate shaved
1/2 c Bing cherries haved (fresh are best)
4 large eggs
1-1/2 c white sugar
4 c heavy cream
2 c whole milk
1 tsp quality vanilla extract
Place shaved chocolate flakes and cherries in separate bowls. Cover and refrigerate.
Whisk the eggs in a mixing bowl (copper preferred) until light and fluffy.
Whisk in the sugar a little at a time until completely blended. Pour in the cream, milk and vanilla,
whisking to blend.
Churn freeze.
After the ice cream stiffens (about 2 minutes before it is done), add
the chocolate and cherries, then continue freezing.
yumm!
You always need a good vanilla. Here is one I like
