Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

There is some great recipes here - vegetarian, low fat and more! Very nice site!

I haven't tried this recipe yet, but it looks great and yummy! It came from a post at eDiets, which by the way, if you haven't checked out eDiets.com yet, you should. Don't we ALL  have weight to lose??

Here's another very good Apricot Chicken Recipe that is lower calorie than the allrecipes.com ones. It's also lower sodium (onion soup mix and Russian dressing are quite high in sodium).
Apricot Chicken - 6 servings
6 - 4oz. boneless, skinless chicken breasts
2 Tblsp. olive oil
1/2 cup all-fruit apricot preserves
1/2 cup no-fat plain yogurt
1/2 cup flour
2 Tblsp. margarine
1 Tblsp. dijon mustard
Preheat oven to 350. Melt margarine with oil in 9 X 13 baking dish. Put flour in bag and shake chicken in bag until covered. Place chicken in baking dish and bake 25 minutes. Mix apricot jam, yogurt and mustard and spread on chicken. Bake 25 minutes more. Sprinkle with 2 Tblsp. toasted almond slivers.
6 servings @ 408 calories per serving

Finally getting back to this! We are having quite the time getting settled in our new home in the FLA Keys - we went from a much larger house to a dinky one by the ocean! Too much stuff, too little space!

I'm going to find another good recipe for you!
