Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

Totally Uncooked. The latest trend for the health-conscious is raw food. Whether it's really healthy is a subject of heated debate. By Peggy Orenstein. [New York Times: Dining and Wine]

I'm not going to make any comments about the raw food craze except it seems to me it would take a lot longer to chew and swallow! Personally, I'd rather eat and get it over with than chew for an hour or so! Not that I don't love food - BUT I kind of like soft comfort food instead of hard stuff!

We love burritos! This is a very easy recipe and tasty too! Read the ingredients label on the tortillas - it's hard to find tortillas that don't have quantities of fat in them. Definitely don't get the kind with LARD!

Bean and Cheese Burritos

8 fat-free or low fat flour tortillas (6 to 8 inches in diameter)
1/3 cup finely chopped onion
1/3 cup finely chopped green bell pepper
1 (16-ounce) can fat-free refried beans
1 1/4 cups taco sauce
1 cup shredded reduced-fat Cheddar cheese -- (4 ounces)

CHOICE OF TOPPINGS

shredded lettuce, chopped tomatoes, chopped ripe olives, plain low-fat or fat-free yogurt and/or reduced-fat sour cream -- if desired

Heat tortillas as directed on package. While tortillas are heating, spray 10-inch nonstick skillet with cooking spray; heat over medium heat. Cook onion and bell pepper in skillet about 5 minutes, stirring frequently, until vegetables are tender. Stir in refried beans and 1/4 cup of the taco sauce; heat through.

Heat remaining 1 cup taco sauce in 1-quart saucepan over medium heat about 2 minutes, stirring occasionally, until heated through. Remove from heat; cover to keep warm.

Place about 1/3 cup of bean mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down.

Spoon warm taco sauce over burritos. Sprinkle with cheese. Serve with choice of toppings.

NOTES : Sprinkle chopped fresh cilantro or parsley over these burritos for a splash of color and a fresh taste. For a bold flavor, use sharp reduced-fat Cheddar cheese instead of mild. For a more subtle flavor, substitute reduced-fat Mozzarella cheese for the Cheddar.
