Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

It's getting windy outside - Hurricane Isadore making herself known. Water is splashing up on the concrete seawall. It's now noticeable that it wouldn't take a whole lot to bring water up and over the seawall and into our storage shed where we keep a small freezer and refrigerator.

It's an interesting experience - yesterday I sat on the front deck for awhile (our electricity had gone off - frequent happening around here) and the house was getting warm. I was all alone and the park was quiet. I felt like I was alone on the edge of the earth with a disaster sneaking in - strange feeling!!

A little while later, I heard metal clanging and was wondering if things were already falling part! I looked out the window and saw that our neighbor's house was receiving its storm shutters. That made the whole thing even more eerie!

Angel Hair Pasta with Lemon and Garlic

(Great recipe from In The Kitchen with Rosie)

1 teaspoon olive oil
2 cloves garlic -- peeled and minced
1/2 cup dry white wine
1/4 cup lemon juice -- freshly squeezed
1 cup chopped tomato -- 1 medium
4 ounces angel hair pasta -- spinach
4 ounces angel hair pasta -- semolina
1/4 cup chopped fresh basil
2 tablespoons parmesan cheese
1 dash ground black pepper -- to taste

Bring large pot of water to a boil over high heat and maintain a boil. Put the olive oil and garlic in a saute pan and cook over medium heat just until garlic begins to brown. Remove the saute pan from the heat and pour in the wine. Return it to the heat. Cook another 1 or 2 minutes, until the wine has been reduced by half. Stir in the lemon juice and tomato. Remove the pan from the heat. Place the pasta in the boiling water and cooked to desired doneness. Drain the pasta and put it into a warm serving bowl. Add the basil, parmesan cheese and black pepper, along with the tomato mixture. Toss and serve immediately.

NOTES : I didn't use two different types of angel hair pasta - just the regular stuff.
