Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

We love polenta and with all recipes I put here (or least most of them!), it's easy to make with easy ingredients. You can do so much with it also - we sometimes put spagetti sauce over the squares for a super easy supper.

Polenta Sauté

Serving Size : 4 Preparation Time :0:35
Categories : High Fiber Low Calorie
Low Cholesterol Low Fat

1 cup whole kernel corn
4 cups water
1 teaspoon margarine
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup cornmeal

Spray rectangular baking dish, 11 x 7 x 1 1/2 inches, with cooking spray. Heat all ingredients except cornmeal to boiling in 2-quart saucepan. Gradually add cornmeal, stirring constantly; reduce heat to medium-low. Cook 8 to 12 minutes, stirring occasionally, until mixture pulls away from side of saucepan. Pour into baking dish. Cool 15 minutes. Cover and refrigerate about 1 hour or until firm.

Heat oven to 250°. Cut polenta into 8 pieces. Spray 10-inch nonstick skillet with cooking spray; heat over medium heat. Cook 4 pieces polenta at a time in skillet about 5 minutes on each side or until light brown. Place on ungreased cookie sheet; keep warm in oven while cooking remaining pieces.

Serving Ideas : Either yellow or white cornmeal can be used in this polenta. Serve polenta with salsa, reduced-fat sour cream and some sliced ripe olives.
