Since I've been collecting recipes for many years, WHY NOT share these special concoctions? Some are from friends, some from magazines or favorite cookbooks. All are yummy and most are low fat. I'm really getting interested in more low fat recipes as I get older. Seems that little bit of extra weight become a little harder to get off! I also collect food and nutrition tidbits from other sources and I will be posting those as well. Enjoy!

Here is a really good recipe with no meat. We really enjoy black beans! Use low-fat sour cream or low-fat yogurt for fewer calories and try to find some low-fat tortillas (some use lard!!) Also use low-fat cheese - it's not that bad!

Black Bean and Rice Burritos

Serving Size : 6

1 cup cooked rice  (use brown rice - even better for you!)
1 tablespoon butter
1 clove garlic -- minced
1 15 ounce can black beans
1/4 teaspoon ground cumin
1/2 teaspoon chili powder
1/8 teaspoon ground cinnamon
6 medium flour tortillas
3/4 cup grated Cheddar or Monterey Jack cheese
6 tablespoons salsa
6 tablespoons sour cream OR
6 tablespoons yogurt
6 tablespoons chopped green onion (optional)

Start rice, if not already cooked. Sauti garlic in butter until golden. Stir in black beans, cumin, chili powder and cinnamon in a saucepan; bring to a boil. Reduce heat, and simmer uncovered, 5 minutes, stirring occasionally. Remove from heat.

Top each tortilla with 2 tablespoons of rice, 3 tablespoons of beans, 2 tablespoons of cheese, 1 tablespoon of salsa and 1 tablespoon of sour cream. (Onions if you wish.) Roll up and serve.

Per Serving (excluding unknown items): 579 Calories; 12g Fat (18.1% calories from fat); 24g Protein; 96g Carbohydrate; 13g Dietary Fiber; 14mg Cholesterol; 455mg Sodium. Exchanges: 6 Grain(Starch); 1 Lean Meat; 0 Vegetable; 0 Non-Fat Milk; 2 Fat; 0 Other Carbohydrates.

The gas range is all hooked up! I simply MUST cook on it today! It's been too long!
