Olé Olé
Today is Cinco de Mayo, a day of celebration in Mexico when the Mexican forces routed the French in a decisive victory at Puebla, Mexico. Typically mistaken as Independence Day, it is however, a great day of celebration in Mexico and the United States known as La Batalla de Puebla. A mere 4,000 Mexican troops defeated the French and thus prevented them from resupplying the Confederate forces of the U.S. during the Civil War. So on both sides of the border, we celebrate this day with colorful festivities, dances and of course, wonderful food. One of my particular favorites is the classic burrito, ground beef, refried beans, tomatos, lettuce, chilis, cheese and topped with a bit of sour cream and guacamole...all rolled inside a fresh, warm flour tortilla. And let us not forget, the all important "margaritas". Where WAS my head! Happy Cinco de Mayo everyone!
